Notes

Helles Bock, with Cherries in primary. Made a 1500 ML starter with a can of Proper starter 24 hours before. Double Decoction mash. Brought to 122 for 20 minutes. 1st Decoction Pulled off 1/3 of the mash, heated to Boiling for held 10 minutes. Realized this took 2 hours to do due to the safety on my friend's regulator kept kicking in and reducing our BTU output. Figured it out for the 2nd decoction 2nd Decoction Pulled off 1/3 of the mash, heated to 158 and held for 20 minutes.Then boiled for 15 Minutes. Added 2nd decoction, and had to heat the main mash to 158 Sparged Sparged with 168 degree water. Found real German Hallertau from Hopunion. Boiled one hour. Had 5.5 Gallons of Wort OG 1.075 Added 2-14.6 oz cans tart cherries to primary Put the wort into the chest freezer, and realized it wasn't chilling so I packed it full of ice. Bought a new one the next day and chilled it down to 48F and then pitched the starter After 10 Days raised the temp to 66 for diactyl rest.
