  • 11.36 lbs 2-Row Brewers Malt;Briess

    Irish Moss

    A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

Notes

I made this today for a highly hopped IPA which I like for a few drinks. I'm adding 100 gms of Zythos hops and 130 gms of fresh homegrown Cascade to the mash to get some more hop character. I used a Blichmann Therminator with a Thrumometer. Cooled 11 gallons in less than 30 minutes to 65F.. Mash at 150F for 90 minutes and did a 90 minute boil. The brix was a little low (10% final) so I added 1 lb of Raw Sugar near the end of the boil.

Added honey to secondary

The Brix was only 10% before fermentation so a added 1.5 lbs of honey to one 5 gallon batch to see how it would effect the end brew. This was an 11 gallon batch which was split into a 5 and 6 gallon carboys.
