  • 6 lbs Premium 2-Row Malt; Great Western

  • 2 lbs Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

    English Brown Malt

    Imparts a dry, biscuit flavor. Used in nut brown ales, porters and some Belgian ales.

  • 0.5 lbs Weyermann Carafa® TYPE II; Weyermann

    Weyermann Carafa® TYPE II; Weyermann

    German-grown two-row spring barley (2004 harvest). Product Characteristics: Carefully roasted to add coffee-brown color, espresso-like bouquet, dark-beer aroma, and body to finished beer. Produces opaque beer with mild, but noticeable roasted aftertaste.     A West Coast hop with high Alpha Acid. Excellent bittering hop.

  • 0.5 oz Tettnanger - 4.5 AA% pellets; boiled 30 min

    Mild, slightly spicy. 'Noble'.

  • White Labs WLP005 British Ale

    White Labs WLP005 British Ale

    This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.

Notes

SS infusion mash @148. Carafa is actually Midnight Wheat malt. Also added 1/2 lb mystery malt, and 1/2 lb bisquit malt. Oats were Coach's Oats, cooked for 5 minutes in 3x the volume of water.
