Take a sample of the beer at some point during the transfer to the bottling bucket. A sample may be taken from the spigot of the bottling bucket or directly from the siphon tube. It is important to take a gravity reading from this sample which will allow you to determine alcohol content and style compliance. Record your gravity and temperature readings in your log.
