  • .25 lbs Roasted Barley;Weyermann®

    Roasted Barley;Weyermann®

    German-grown spring barley (2004 harvest). Product Characteristics: Processed slowly and thoroughly by our drum process. Evenly roasted specialty grain. Adds plenty of dark color and clean depth of flavor to very dark brews. Recommended Quantities: Up to 5% of total grain bill. Suitability (beer styles): Stout and similar ales

  • .25 lbs English Chocolate Malt

    English Chocolate Malt

    A well-known, commercial English ale yeast, selected for its fast fermentation character and its ability to form a very compact sediment at the end of the fermentation, helping to improve beer clarity. This yeast is recommended for the production of a large range of ale beers and is specially well adapted to cask-conditioned ales and fermentation in cylindro-conical tanks. Sedimentation: high. Final gravity: medium. Pitching instructions: Re-hydrate the dry yeast into yeast cream in a stirred vessel prior to pitching. Sprinkle the dry yeast in 10 times its own weight of sterile water or wort at 27C ± 3C. Once the expected weight of dry yeast is reconstituted into cream by this method (this takes about 15 to 30 minutes), maintain a gentle stirring for another 30 minutes. Then pitch the resultant cream into the fermentation vessel. Alternatively, pitch dry yeast directly in the fermentation vessel providing the temperature of the wort is above 20C. Progressively sprinkle the dry yeast into the wort ensuring the yeast covers all the surface of wort available in order to avoid clumps. Leave for 30 minutes and then mix the wort e.g. using aeration.

Notes

Steep the grains in sacks in 1.5 gallons of 154°F water for 30 minutes. Sparge with a half-gallon of water (170F+) one pint at a a time. Add water to bring total to 2.5 gallons. Bring to a boil with 1 lb of dark dry extract. At 20 minutes after boil add the Challenger. At 40 minutes into the boil, add 3 lbs of pale liquid Muntons (or other). Return to boil. At 15 minutes add Irish Moss. At 5 minutes add the Fuggles whole. At flameout att 1/2 oz. of Fuggles pellets. Make a 1 cup 75F starter for the dry yeast 45 minutes before the boil ends. Substitute a good liquid yeast if you have it (I was out...) but do not use a low-attenuator or one with a strong ester signal. Pitch at 70-75F. Leave it in the primary for a week -- Up to you if you want to rack to 2ndry -- this Mild will finish out quickly with the Safale 04. Oh, and don't forget to play the blues while brewing...

A fine day for beer and blues..

Becca T. came a-callin' in time for the final hops addition. A sweet, traditional dark mild is now in the works. Actual OG = 1.038. Pitched a very-frothy 1 cup starter of S-04 at 73°F. The house smells great.... C'mon back in a couple weeks for an early taste test. Oh...and put on those old blues LPs...

April 8: Opened the primary because bubbling has almost stopped at 7 days. Siphoned a sample of 1 cup. BEAUTIFUL! Crystal clear medium brown – like the thin coffee some diners serve. About the color of a brown beer bottle in the light. Aroma is very much like coffee – in fact if you only had a casual whiff you’d think you were sniffing cold coffee. On the taste it is very pleasant -- Rich coffee and roasted grain in flavor, with a nice, soft bitterness that does not linger. It is clean and damn near refreshing – unlike anything else I have brewed to date. SG=1.012. Will wait a couple days an bottle with corn sugar.

Exceptional beer...!

April 25: 4/25 – FIRST TASTE: Extremely smooth and mellow. Color is crystal clear mahogany – nearly black when observed from a distance, with ruby-red highlights when held to the light. A light, sparkly tan head of about 2 fingers diminishes slowly leaving some nice lacing, but the carbonation is not excessive. The nose is at first bready – somewhat yeasty with pumpernickel scents, a little bit of caramel, a little strong-coffee, and then later earthy British hops emerge as it warms up a bit. Extremely clean and mouth-watering when gulped. A pleasant mild bitterness that tastes like the roasted barley, but is quick to leave, with no strong hop-based bitterness. Very clean, thirst-quenching finish. EXCELLENT! I believe this is what a true Mild is intended to be.

Just Terrific

I have been nursing these for the past two weeks -- Had another just now. This is a terrific, easy to drink, yet pleasantly complex beer -- The dark roassted grains make it interesting up front, the finish is clean and fresh. A real treat.

I have brewed this Mild three more times, as has a fellow brewer. This is always a great beer, but I did notice less flavor complexity when I used a malt syrup other than Munton's. A great gulper.
