Notes
After reading "Baravian Helles" book by Horst Dornbusch, I concocted this easy recipe. All you have to remember is 8's and 4's thus "848 Helles". Step mash 30 minutes at 122F, 15 minutes at 146F, 30 minutes at 156F. Mash out with 170F and sparge. IMPORTANT: note on the hops. When I am brewing a noble German beer, I use a German hop blend for all additions, (Bittering, Flavor, Aroma) and this blend consists of equal parts of N. Brewer, Saaz, Hallertau, Tettnanger, and Spalt. I find it gives off a much more complex flavor. That is why all of the AA% are the same, it is an average of the above.

Well, after painstakingly researching, reading, concocting and brewing this recipe, it turned out great. I now have a great German lager as my house Helles. I highly recommend brewing this ... It's wonderfully satifying.
