honey ale fermentation time
Anyone understand why the NB honey ale recipe has a 1 week ferm time and a 1 week secondary time? The gravity is high from the honey I suppose but why the short secondary time? Thanks in advance.

Most of your fermentation will take place in your 1 week primary. The amount of honey that is in this recipe won't require the long times to ferment like you'd expect a mead to ferment. As long as you treat your fermentation well, that time frame should be perfectly fine.
