bitter versus temperature of beer

Post by caosesvida »

I find that the beer tastes more bitter when the brew is cold, after it sets for a while and warms up that taste seems to mellow out. I find the beer tastes a lot different at different temperatures. Does anyone know the cause of this, besides alzhimers I mean.

Stunted Taste Buds

Post by BillyBock »

It's at least the physiological effect of cold on your taste buds. The cold stuns the taste buds limiting your ability to discern. As the fluid warms it's a different story. This is the reason you should let a beer warm up a bit if you really want to get an idea what it tastes like. As it warms up CO2 comes out of solution which carries the aromas out of the beer into your nose.
