Oktoberfest recipes..

Post by Suthrncomfrt1884 »

Hey everyone.

I'm going to be doing an oktoberfest soon. It's probably a bit early to be thinking about it, but I'd like to have a nicely conditioned beer waiting for me in the fall.

I haven't jumped into lagers yet, and I'm not sure I want to sacrifice my garage fridge for it either (I'll cave eventually). So I suppose I'm interested to know if any of you have found a good Oktoberfest recipe that uses an ale yeast?

I will probably end up designing my own, I just want to make sure ale yeast will work out for the style and not make it taste too fruity.
Primary - Belgian Dubbel, Belgian IPA
Secondary - Cherry Lambic
Bottled - Bourbon Barrel Coffee Porter, Double Chocolate Raspberry Stout, Imperial Nut Brown, Apfelwein, American Amber Ale w/Homegrown Hops, Breakfast Stout
Kegged - Bass Clone, ESB

I would look at these yeasts:
Wyeast
--------
1007 German Ale
1098 British Ale
1275 Thames Valley Ale

Maybe even a California Lager Yeast, since its temperature range is between 58-68 F.
