New recipe (for me anyway)

Post by Okami »

Hello all,
I am a new brewer and I am trying my hand
at creating a recipe for the first time.
I am a bit nervous. Here is my latest effort.
I have looked to the beer calculators for help,
but I am afraid the only way to truly know if
a recipe is any good is to make the beer$.

3.3# Amber Malt extract syrup
4# Amber dry extract
8 oz Crystal 60L
1oz Target 8.1%AA pellets 60 min
1oz Fuggle 5.1%AA pellets 30 min
1oz Kent Goldings 4.6%AA pellets 15 min
1 oz Cascade 4.0%AA pellets less than 5 min.
OG 1.062
IBU 45.8
ABV 5.8%

I may try this. I know it is probabally not
a particularly adventuresome recipe, but it
is to me. If this is going to suck, somebody
let me know so I don't waste 20 bucks on
ingredients.

It's ok but!

It'll come out about like Killians Red, do NOT boil the grain, just let it soak in a grain bag and remove before boil. Boiling grains produces bitter off flavors. Also ease back on the hops abit, you might get it more bitter than you'd like.
Hope this helps,

It is working so far

Post by Okami »

I decided to give this one a shot.
It is the 6th day in the secondary, the
brew spent 2 days bubbling HARD in the
primary. So far it is barely bubbling and
seems to be clearing up nicely. Few spots of
bubbles/foam on top and a nice layer of sediment
is forming on the bottom of the carboy.
I'll post back in 3 or 4 weeks to let you know
how it tastes. I plan to bottle with 5oz of
corn sugar.

bottled

Post by Okami »

Bottled that brew the day before yesterday.
I have broken my hydrometer :( I think the
cat knocked it off the cabnet during one of
her freakish episodes, so I don't have a final
gravity to make alcohol content calculations.
I tasted it and it is rather bitter, but not in
an unpleasant way. I taste the higher alcohol
content. I may have to let this one age a little
while to mellow that out. I will open a bottle
in a few days to check out the carbonation process
and take a gravity reading with a new (and
secured in a safe place) hydrometer.
A couple of weeks and I should know the results
of the recipe.

First Taste

Post by Okami »

For those of you following my disorganized posts
concerning my first attempt at formulating my
own recipe, I thank you much.
I opened a bottle of this ale today to check on
carbonation and have a taste.
Carbonation is adequate.
Taste, hmmmm. I can taste the higher alcohol
content (5.25% ABV; I am used to making 4.1% beers)
and it is not unpleasant. However, I don't think
I will be making such a strong brew for a
while. I used lots of hops (lots relative to the
kit instructions I am used to) but I am not getting
a lot of flavor. It is actually kind of bland.
The aroma is lightly sweet. I wish the aroma
were stronger. I anticipated more bitterness or
more taste. It is not a terrible beer, but I
may have been too ambitious with my expectations.
It has a pleasant aftertaste, slightly bitter.
I think I will let this one set out at basement
temperature (about 64`F) for a few more days before
refrigerating. If this is a bad idea, somebody
stop me.
I also plan to keep some of this beer out to lager
for a month, or a few months, as an experiment in
aging beer. Somebody who has let a beer age or
knows something about this, please take a look
at my recipe in a previous post and let me know
if this will result in a good, better or bad beer.
Thanks for all the input.
