To Prime, or Not to Prime

Hey everyone, I am going to be switching to kegging my beer and had a few questions. I was wondering whether or not to use priming sugar to help carbonate the beer, or just force the Co2. If I was to age the beer for extended amounts of time, could I reduce or possibly eliminate the sediment? I was ...

Sweet Beer

I bottled it on Thursday. I tried it again today, seems to have good head retention already. Tastes, and smells a bit like wine.

What type of sugar would you recomend using? Corn sugar?

Thanx for the help!

Beer Too Sweet

I recently brewed a beer that was supposed to be in the style of a Classic American Pilsner. On bottling day, I took a taste test before and after adding the priming sugar. It had a really great flavor before the sugar was added, but when I tried it after I had bottled the beer, it tasted/and smelle...

After I cool the brew pot down between 80-90*F, I place a straining bag into the fermenting bucket, then I put 2 gallons of bottled water into the bucket. I dump the cooled wort into it, then top off with the bottled water, vigorously splashing. I wait maybe five minutes, then I use the spigot to fi...

(which I know is adding unfermentables, but I wouldn't think enough to boost the OG to 1.024!)

(meant to say 1.124) /\

I took the reading at about 70*F, but wouldn't it calculate a point or two higher?

For the belgian, I used 1# Flaked rice, 1# Carapils. The Stout I used 1# Chocolate malt and .5# Roasted Barley, .5# Black patent. I did put 5oz of Dark Chocolate in the boil (which I know is adding unfermentables, but I wouldn't think enough to boost the OG to 1.024!) For water, I use 2.5 gallons in...

I usually place the grains into cool water, and when it reaches boiling, I remove them.

My hydrometer is accurate, but the volume is less than 5 gallons because of the sediment.

High OG

I've been brewing for several months now and made some excellent beer, but lately, I've been having some high OG reads. Belgian special OG- 1.122 FG 1.012 Chocolate Stout OG- 1.124 FG 1.022 When I calculate my recipe's with beer tools, they are supposed to be around 1.060-1.070 OG I usually use 6lbs...
